Gluten free carbonara 🧀

I cannot believe I hadn’t made carbonara before now :0 question to myself – where have I been?

Garlic is a high fodmap, however luckily for me it’s one I can tolerate. If it’s an ingredient you can’t tolerate & you want to give this fish a go I would just remove it completely from the recipe ☺️

The recipe serves 1, but can be easily made to feed more 🍝

  • 1 x lean bacon medallions (or any type of bacon you have) chopped
  • 15g of Parmesan & extra for topping
  • 2 eggs
  • Gluten free tagliatelle – I used the brand Difatti
  • 1 clove of garlic crushed
  • Lemon (optional)
  • Fresh parsley to garnish

  1. Start by boiling your water for your choice of gluten free pasta
  2. In a bowl mix your eggs, parmesan, a squeeze of lemon juice and season well with black pepper and salt
  3. Add oil to your saucepan (or fry light) & turn to a medium heat, once hot add your garlic and bacon
  4. Add your tagliatelle to your boiling water and cook as per the instructions. If using Difatti tagliatelle I boiled the pasta for 8 minutes
  5. Whilst your pasta is boiling pan fry until your garlic & bacon until the bacon is cooked
  6. Once the bacon and pasta is cooked, use a utensil with holes to transfer your cooked pasta to your saucepan (use a utensil with holes to ensure some of the pasta water remains in your mixture).
  7. To your saucepan add your egg mixture and mix continuously
  8. Once all combined, plate up and serve with extra parmesan and some fresh parsley
  9. Enjoy 😊
