Fodmap Salmon & Prawn Risotto

You cannot beat a hearty comfort & filling dish when it’s miserable like this outside, who’s with me? My easy, fodmap friendly salmon & prawn risotto is definitely one to try.

Serves 2

Ingredients;

  • Salmon fillet x 2
  •  1 x Pack prawns ( I used the raw king prawns)
  • 120g Risotto
  • 1/2 Fodmap friendly chicken stock cube, I would use either Massels or Sainsburys
  •  Chives (I used dried as I couldn’t find fresh, but either is fine)
  • 1 x Lemon
  •  Soft cheese, I used Philadelphia – however if dairy intolerant opt for dairy free
  • 80g Canned peas (45g canned peas are fodmap friendly)

Method;

  1.  Mix your 1/2 stock cube with 500ml boiling water
  2. Add 1/2 of your stock to a deep frying pan, along with your risotto and simmer
  3. Cook your salmon in the oven as per the instructions provided (once ready take out the oven and flake)
  4. After around 10 minutes your risotto should have started to soak in the stock, add the remainder stock, plus the juice of 1 lemon and simmer until softened & thickened (you may need to add more liquid as you go)
  5. Continue to stir
  6. Once your risotto has thickened add 1 tablespoon of your soft cheese, 1 teaspoon of chives & a good helping of cracked black pepper
  7. Add your prawns to cook, along with your cooked flaked salmon
  8. Once the prawns are cooked through add any extra seasoning (I opted for a few more chives sprinkled on top!)
