You cannot beat a hearty comfort & filling dish when it’s miserable like this outside, who’s with me? My easy, fodmap friendly salmon & prawn risotto is definitely one to try.
Serves 2
Ingredients;
- Salmon fillet x 2
- 1 x Pack prawns ( I used the raw king prawns)
- 120g Risotto
- 1/2 Fodmap friendly chicken stock cube, I would use either Massels or Sainsburys
- Chives (I used dried as I couldn’t find fresh, but either is fine)
- 1 x Lemon
- Soft cheese, I used Philadelphia – however if dairy intolerant opt for dairy free
- 80g Canned peas (45g canned peas are fodmap friendly)
Method;
- Mix your 1/2 stock cube with 500ml boiling water
- Add 1/2 of your stock to a deep frying pan, along with your risotto and simmer
- Cook your salmon in the oven as per the instructions provided (once ready take out the oven and flake)
- After around 10 minutes your risotto should have started to soak in the stock, add the remainder stock, plus the juice of 1 lemon and simmer until softened & thickened (you may need to add more liquid as you go)
- Continue to stir
- Once your risotto has thickened add 1 tablespoon of your soft cheese, 1 teaspoon of chives & a good helping of cracked black pepper
- Add your prawns to cook, along with your cooked flaked salmon
- Once the prawns are cooked through add any extra seasoning (I opted for a few more chives sprinkled on top!)
