I’ve finally perfected my low fodmap chicken fajita recipe & I’ve got to be bigheaded & admit I’m proud of this one ☺️
Tom can eat ANYTHING yet his been making me use my recipe to make him the marinated chicken for his lunches & dinners 🍗 instead off using it for fajitas his been adding rice/mash etc.
The recipe below Tom eats to himself, but I think it could serve two (unless you’re Tom 😂)
Ingredients;
- 2 x Fillets of chicken breast, diced
- 1 Yellow & 1 red pepper sliced
- 1 Tbsp smoked paprika
- 1 Tsp paprika
- 1 Tsp ground cumin
- Tabasco – 4 drops
- 1/2 Tsp cayenne pepper
- 1/4 Knorr gluten free ham stock cube
- Black pepper – few grinds
Method;
- Fry your diced chicken breast in fry light (or any other oil) with your sliced peppers for 5 minutes on a medium heat (I used number 4)
- Add all the ingredients listed above, mix together. Add 1 Tbsp water
- Leave to cook on the same heat for 20 minutes (or until cooked through)
- Serve with your gluten free tortillas & a chunky salsa ( I used Warburtons)
To make a salsa I used the following;
- 6 baby plum tomatoes chopped
- Large handful chopped coriander
- Squeeze lime juice
- Pinch of salt
Add all the above to a bowl, stir & enjoy 😊
