Comfort food at its finest? This has got to be one of them!
I absolutely love a chilli, so when I was asked to make a fodmap friendly recipe for one.. it just meant a good excuse to make another bowlful 😋
Serves 1
Ingredients;
- 125g 5% lean beef mince (turkey mince/mince substitute will also work fine)
- 1 x pepper chopped
- 1 x carrot chopped
- 1 Tsp paprika
- 1/4 Tsp smoked paprika
- 1/4 Tsp cayenne pepper (ensure fodmap friendly)
- 150g chopped tomatoes
- 1/4 knorr ham stock cube (with 25ml water)
- 50ml red wine
- Basmati rice & fresh coriander (optional) to serve
Method
- Start off by browning your mince, on a low heat-medium heat (I had mine on no.3)
- Once brown add all your spices, give it a good stir and leave for a few minutes
- Add your chopped pepper & carrot
- Add your chopped tomatoes, 1/4 stock cube, water & red wine
- Turn the heat down & leave to simmer ( I left mine for an hour)
- Serve with basmati rice & fresh coriander
