Who else is obsessed with any type of gravy/stock/sauces? I think it’s safe to say I 100% am!
Unfortunately there are no low fodmap gravies on the market (as of yet anyway!) š© . However, to let you all in on a little secret I hear there is a company working on a certified low fodmap gravy to the UK! YES PLEASE š
I’ve been following a company called borough broth for quite some time now, as after some research I found out they sell organic low fodmap broths, both chicken & beef š amazing or what? Now I’ve finally got my hands on some my mind has been going crazy with meals to put together!
Summer is now coming to an end & soon the slow cooker will be a staple in my household, anyone else? So I thought in preparation I would make a chicken casserole in the slow cooker, ready to perfect for winter nights āļø
One thing I love about this recipe is how versatile it is, if you want to add more veggies chuck them in! Also great for making ahead & adding more/less š
Ingredients (serves 3-4)
- 1 bag low fodmap Borough broth chicken
- 4 fillets chicken breast
- 1 Tbsp gluten free flour
- Small bottle white wine (see my photo for the one I chose)
- 4 carrots
- Bag runner beans (fodmap friendly in 75g portion)
- 600g mini potatoes
- Whole grain mustard – 2 Tbsp
- Fresh thyme (good handful)
- Salt & Pepper to season
Recipe;
- Add your chicken to your slow cooker along with the flour and stir
- Add all other ingredients (excluding your salt & paper) to your slow cooker
- Give the pot a stir & cook on low for 7-8 hours
- Season with salt & pepper to finish
- Serve with a fresh gluten free loaf š„
