My tummy has NOT been loving me lately π so for dinner I really fancied something more ‘light’ but also warming.
I opted for a salmon low fodmap broth π²
It was SO yummy, SO easy to make, & most off all SUPER versatile & can be paired with any protein you fancy.. or just left with veggies!! π₯
Another thing I LOVE about this warming bowl is that you can add any veggies you fancy βΊοΈ one of the veggies I originally opted for is leeks. However I’ve left this out of this recipe as it’s high fodmapβοΈ
Serves 1
Ingredients;
- Monash lowfodmap certified Massel 7’s chicken stock cube (1/2)

- Tamari gluten free soy (I used reduced salt)

- 150g potatoes
- 1 large carrot
- 60g courgette
- 1/2 pack ready to eat salmon flakes (I use Aldi oak roasted) *can also substitute for another protein of your choice*
Method;
- Add around 250ml water to your saucepan (I guesstimate mine)
- Add 1/2 of your stock cube & bring to the boil
- Chop your potatoes into small chunks & add to your saucepan, turn the heat slightly down & gently part boil your potatoes (around 10-15 minutes)
- Add all your veggies & 1tsp of soy sauce
- Cook for a further 5-8 minutes
- Turn off the heat, stir through your salmon flakes & enjoy π©βπ³
