As I’m such a fitness fanatic, I do like to track my macros! Especially just before holiday when I’m trying to ‘lean’ up.

I like to eat little and often, as opposed to only a few bigger meals. I try to therefore make meals that’s are lower in calories but filling (I like my food 🙈)

I recently made an aubergine one pot dish, similar to a parmigiana. It was so yummy, low in calories (233!) and for me an overall winner. This is definitely too good not to share!

So here it is, please let me know if you give this a try and what you think;

Serves 1


  • 125 5% Lean beef mince
  • 150g Aubergine
  • 125g Chopped tomatoes
  • 2 Egg whites
  • 1 Tsp paprika
  • 1 Tsp cinnamon
  • 1/2 Tsp chilli powder (ensure Lowfodmap)
  • Balsamic vinegar

Start by chopping your aubergine in thick slices, once done add a drizzle of balsamic vinegar (see below), and spray with fry light. Add to the oven at 180 degrees and cook until they have become soft, but haven’t not crisp as shown –

Remove aubergine from the oven and allow to cool. In the meantime add your mince to the saucepan with some fry light, brown the mince and add all spices. Continue to add your chopped tomatoes and a helping of water. I then allow mine to simmer for around 20 minutes.

Once the mince is done you can start to layer your dish, I started with aubergine, and then added some of my mince. I managed to get two layers out of mine.

Whisk your egg whites and add a small amount of almond milk (optional) pour over the top of your dish and transfer to the grill.

Leave until you get the crispyness you desire. I left mine under the grill for around 25-30 minutes.

Serve with a side salad/veg/crispy kale of whatever else you fancy.
